Beef Sausage And Green Beans With Sweet Potato ...

The other night I made dinner. I was able to pick up a beef sausage for less than $2.00 at Walmart. I also grabbed a pack of green beans from the produce area for $1.99. And a packaged of Sweet Potato fries for $3.00. In total, of $7.00. Which isn't bad for three people. It came to $2.33 a meal. That is cheaper than any fast food joint in town. My boyfriend wanted me to make beef sausage, cabbage, and white potatoes. SinceI can't have the white potatoes, I used sweet potatoes baked in the oven instead... read more »

You Can Eat Healthy And Have A Sandwich Too

Many people tend to add unhealthy fattening stuff to their sandwiches. Why because it tastes good. I knowI was one of those people for the longest time. As long as it tasted good. I didn't care if it was healthy for me or not. 1. Eat smaller sandwiches. When eating out, go for sliders instead of big burgers. Too many toppings add on calories. 2. Choose lean protein choices. Like tuna, salmon, chicken or turkey. 3. Add on vegetables or fruits. Instead of bacon, different types of cheese and fried oni... read more » Accepting Food Stamps

6 Ways to Get Mentally Fit for the New Year

With the start of a new year, it is important to reflect back on the prior year, assess what went well, what didn’t and decide where you want to go next. It takes a lot of mental toughness, self-love, and discipline to create the life you want. Simply coasting along on cruise control reacting to life can lead to victim mentality and stagnation, which is something I have experienced first hand.Dr. Sanam Hafeez PsyD,a New York City-based licensed clinical psychologist, teaching faculty member at Columbia U... read more »

No Bake Peanut Butter Balls

I did end up making a desert last night. I made “No Bake Peanut Butter Balls”. Which is similar to the recipe I made a week or so ago called “Peanut Butter Energy Balls“. My oldest son stopped over with my grandson. I gave him a bag full of the “No Bake Peanut ButterBalls”. As he really likes peanut butter. Plus, he is in to fitness and healthy snacks or healthy alternative snacks. He says he likes this recipe better. As it is a bit sweeter and chewy. Great to have before, during and after a workout. Meatloaf and Salad Recipe

The other night I made meatloaf in the crock pot. Plus a big side salad with it. My portion of meatloaf was small. As I have been cutting back on the amount of meat I eat. Instead I have trying to make the portion on my plate 3 part veggies to 1 part meat. This is more healthier for my family. Plus, it allows for the different meats I cook to be stretched further. The meatloaf was really easy to make. I use ground hamburger, mixed in a packet of meatloaf seasoning, dried onions, 2 eggs, 1/4 of milk, ... read more »

Recipe: Chococonut Shake

While you would expect the cravings for ice cream and milkshakes to be greatest in the peak of summer, when its crazy hot, thats not always the case!  I used to work at an ice cream shop and on the really scorching days, we saw just as little business as on the cold, rainy days. When its too hot, something super sweet and rich isnt that appealing! Its those warm, but not hot, late spring or early fall days (like now) when were in the mood for a cold and creamy treat.  Yum! Sunday Funday on Disappearing Island

I just had my first experience with a SUP ( stand up paddle board ). Another couple on our dock took me and Kim out on their boat down to the inlet for a little island time. This island called, Disappearing Island, is really just a gathering place to hang out and socialize with other boaters. Every day at low tide the water is so low the island appears and it is one large sandbar everyone parks their boats up close and enjoys soaking up some sun and fun! Latest Finds: A Purely Elizabeth Granola Review!

Granola is my favorite sweet cereal, hands down.   Despite its healthy reputation, however, some commercial granolas can be unhealthier than even the worst of your childhood sugar cereal favorites!  Granola is very dense and can pack a lot of sugar and fat into a very small portion (who eats a measly quarter cup?) and Ive seen boxes of granola where the ingredients list was longer than a Faulkner sentence and featured more chemicals than an orgo exam. No thanks! Luckily, not all granolas are candy in ... read more »

Recipe: Vegetarian Pad Thai

I'm on a mission to cook my way around the world! It's a lot of fun to explore different cultures and food can be such a big part of culture. You Are Welcome In This Place

The other morning I wrote about what makes our community viable, authentic and loving. I posted 4 points or traits. I realized that perhaps I needed to expound on them. Why? 12 Lessons I Learned While I Was 21

Where To Eat In Greensboro

Though I live in NYC now, I grew up in a (comparatively) small town in North Carolina. What we do have is lots of shopping (inside, outside, a mix of the two) and some pretty good food. The produce in Greensboro, NC is much better than in Manhattan, not to mention much cheaper.
